Banana Bread with Peanut Butter Frosting (For Dogs)

I’m between jobs that require me to be places and wear pants at the moment, and am starting school in just a few weeks so finding a job outside of my various freelance gigs feels kinda pointless at the moment.

So what’s a girl to do? Bake. Bake all day. Duh.

But what about when you’ve baked so hard you have too many baked goods to handle? Well, you bake for your dog, of course.

Dog Banana Bread Peanut Butter

I made this banana bread with some random stuff I had around my kitchen. You can customize it to your liking or based on what you have in your pantry (there are several variations offered in the recipe; see below).

The awesome thing about baking for dogs is that if there’s peanut butter involved, they probably won’t be very fussy. I’m pretty sure I could have baked a piece of rotting bread and spread peanut butter on top and Millie would still be a happy gal. Bless her.

Feel free to think baking your dog banana bread is over the top. Because that might be partially true. But I’ve always believed that if you’re going to have a pet, you may as well spoil the crap out of them.

Banana Bread with Peanut Butter Frosting (For Dogs)

Prep Time:  20 minutes, plus time to chill dough
Cook Time: 30-45 minutes
Servings: 1 medium-sized loaf of doggie banana bread (enough for 8-14 treats)

Ingredients – Bread:

  • 2 large ripe bananas, mashed
  • 1/4 cup natural peanut butter
  • 1 cup oat flour (you can make your own by pulsing rolled oats in a food processor or blender until a powder/flour forms)
  • 1 cup rolled oats
  • 1/2 teaspoon cinnamon (optional)
  • 1 teaspoon baking soda
  • 1/4 cup ground flax
  • 2 eggs OR 4 tablespoons chia seeds + 1/4 cup water
  • 3/4 cup water or milk or unsweetened almond milk or apple sauce

Ingredients – Frosting:

  • 1/4 cup natural peanut butter
  • 2-3 tablespoons plain yogurt, non-diary yogurt, milk, or nondairy milk to thin (optional)

Method:

  1. Preheat oven to 350°F . Oil a loaf pan.
  2. Mash bananas in a large bowl. Add peanut butter and mix well. If necessary, microwave peanut butter for 30-60 seconds until it becomes melty and pliable enough to stir.
  3. Add oat flour, rolled oats, cinnamon, baking soda, and flax. Mix well.
  4. Add remaining ingredients and mix until well combined.
  5. Pour batter into prepared pan and bake for 30-45 minutes, until a crust forms on the top and a toothpick/fork poked in the center of the loaf is clean upon insertion and removal.
  6. Remove from oven and allow to cool.
  7. To prepare frosting, thin out peanut butter with milk/yogurt (if using) until desired consistency is reached. You can also just spread peanut butter on top. Your dog probably won’t mind.

Fun Things From the Weekend

I seem to be randomly sharing my weekends lately. It’s kinda fun, so I’m going to keep doing it. I love reading these blog posts and I am finding it fun to share them, as well.

Thursday:

My weekend started Thursday night when I picked up Jenn from the airport at 11:55pm. She came to town for a minute for a friend’s bridal shower. I brought Millie to grab her from the airport. Millie was VERY excited to see her Auntie Jenn.

We got home around 12:45am and it was bed time for all of us (once Millie calmed down from the Auntie Jenn excitement).

Friday:

Friday I woke up early (shocking I know), went to barre, and made buckwheat and oatmeal waffles. Because waffles. I had mine with sunflower seed butter + bananas + other fruit.

Jenn and I went downtown so she could visit her friend who has a newborn and a toddler. I would post pics, but I feel weird posting pics of a baby that isn’t mine without asking. I should ask. Anyways, he was super cute!! Also, god bless all mothers everywhere. Motherhood seems incredibly stressful and exhausting. I’m good with just fur babies for the foreseeable future.

Then we went to Anodyne Coffee (the best coffee in MKE IMO) and walked around the lake front for a while. Milwaukee is so underrated. #hiddengem

After that, it was back home. Jenn left shortly after to meet some friends for lunch. I was feeling anxious about getting some stuff done so I opted to stay home and #werk. Millie sat outside with me and modeled an awesome new sticker I got from Made Wild.

Around 4:30, Jenn came and picked me up and we headed to TJs to buy some stuff for a cake she was making for a bridal shower.

We came back and got crackin’ on the cake. We made two layers vanilla and two layers banana. While cakes were baking, I made us some dinner with random things we had around the house. Going out seemed stressful because we were pretty tied to the cakes.

I made us a build-a-bowl sort of thing with my favorite marinated tempeh, black rice, cauliflower rice, baby kale, avocado, cilantro, green onions, roasted Japanese sweet potatoes, cashews, pineapple, and a spicy peanut sauce. We ate around 8:15pm with my mom and the meal turned out to be really yummy and totally hit the spot.

Have you had Oriental/Japanese sweet potatoes before btw? They are AMAZING. They’re purple on the outside and white on the inside. They taste like chestnuts and I’m pretty sure they are what the potato emoji is representing. I like to bake them whole and gobble them up. For the bowls I sliced and tossed them in turmeric, cumin, and cayenne and roasted them up. YUM.

After dinner, we set the cakes out to cool, and started getting ready for bed (we were tired) and it was lights out by 10:00pm. #partyanimals

Saturday:

Saturday I got up at 5:30am (classic me) and got Jenn up at 7:00am (per her request) to finish the cakes. We whipped up some cream cheese frosting and nutella buttercream. Millie got caught in a powdered sugar shower and ate a bunch of the floor. Then we assembled the cake.

Jenn decorated it all fancy to make it look like a birch tree, which was the theme of the shower.

Around 9:30am she left for the shower and then I ran a bunch of errands, ate bowl leftovers for lunch, and laid down (I wasn’t feeling too well) for several hours.

That night, we headed to a bonfire/BBQ at a friends house for a birthday celebration of sorts. It was a good old time with warm weather, lots of laughs, and lovely people.

Around 12:30am we headed home (eep) and it was straight to bed!

Sunday:

Just a few short hours later at 4:00am, it was time to leave for the airport. I dropped Jenn off and was back home by around 5:30am. I napped for another two hours (until around 7:30am) and then took Millie to the park. I snapped this photo as she happened to turn around and sniff her butt. My dog is the weirdest. Like does anyone else’s dog do this? Anyways, eventually I went to a barre class to finish out the morning.

After lunch, I did some work. Then, I headed out to Panera with my mom. It was quite an event. A tire blew when we were getting gas before dinner and we ended up walking to Panera.

Panera literally messes up my order every single time. I double checked to make sure they had my order right and went up the the prep counter like a frickin’ crazy person to verbally verify they were going to give me a salad without chicken.

Then, my salad came with chicken. Like it does every time. In fact, a girl working said something like, “I feel like every time I’ve seen you here they mess up your order.” And I was like “yeah.”

And then I’m in this awkward position where my order is covered with chicken and it’s all mixed in and they have to make me a new one and I feel like a whiny bitch. But like also, I don’t eat chicken and don’t like chicken shreds touching every inch of my salad.

They then always give you the option to take home the salad or have them throw it away. Let’s just say my dog has eaten a lot of chicken salads this summer. Oh, Panera. I love you but get your sh*t together. Thanks so much.

Then we Uber’d home since the car was not going to make it. By that point, it was somehow like 8:30pm, so I enjoyed some ice cream and an early bed time.

And in case you care…

I’m happy to report the car is now all better with shiny new tires.

Shortcut Mini Vegan Banana Cake Donuts with Almond-Coconut-Vanilla Glaze

It was a very humid day today here in Milwaukee. One of those days where when I left the mall after a fail-boat shopping trip to look for a dress for my friend’s wedding, I literally felt like I had to swim through a wall of heavy wet air to reach my car. MmmMmm, sweaty.

As I write this post, I hear thunder rumbling in the near distance. Today’s inevitable storm is on it’s way! Get excited folks, according to this morning’s news it might get dramatic. And who doesn’t love a dramatic storm (unless of course, you’re Millie, in which case, you may refuse to even step on damp concrete).

I was bored and restless so naturally, I found myself looming in my baking pantry. As I rummaged through my goodies, I noticed a dusty old box of fancy cake mix in the back corner of the pantry. Cake mix (or any baking mix) in my household was considered worse than dropping a four-letter word. My mother and grandmother could have cared less if I screamed the F bomb as a kindergardener, but would thrash out irrationally if I dared bake anything not from scratch.

To be honest, I couldn’t recall why the box was even there. I mean, it was a nice fancy Cherrybrook Vanilla Cake Mix from Target, probably purchased as a back-up at some point, left here by another human, or for some purpose that currently evades me. Anyways, the mystery cake box stared me down, daunting me, saying, “figure out how to use me, you beyotch. let’s get creative.”

Game on. I decided I’d do something different than use it for cake. Honestly, when it’s a nice, preservative/junk-free cake mix like the ones Cherrybrook makes, I don’t really even think it tastes bad, as long as you don’t think of it in the same category as homemade cakes that ooze with butter and love. These mixes create pastries that more airy/fluffy orbes of sugary chewy goodness. If you take them for that, they are good. This is also how I advise meat-eaters to think about veggie burgers. Don’t think it’s going to be the same as meat. Take it for what it is and appreciate it’s different deliciousness. So I must agree with my heritage, no box mix will even come close to a from scratch cake. I wasn’t even going to blog these because they seemed like such a cheat, but I had a few inquires after I Instagramed them, so I figured I’d share my recipe. Apparently people want their vegan banana mini cake donuts, and who am I to deny them?

As I continued to voyage through my mountains of baking supplies, I noticed my good old Wilton Mini Donut pan for baking mini donuts in the oven. The stars were aligning. Cake mix. Cake donut pan. I decided to use it to make cake donuts because mini things are instantly adorable and more fun.

I nixed the additions on the cake mix box and replaced them with some vegan tricks. I used bananas to replace eggs because it works well and tastes great. The sweetness and flavor from the banana also complimented the vanilla flavors of the mix quite well. I also used carbonated water because from lots of experimental vegan baking I’ve learned it gives a nice, springy texture to things, which is what I was looking for in these cake donuts. I used other things I had around for glaze because who wants to go to the storm in a rain storm, am I righttt?

Anyways, these turned out adorable and yummy and vegan and I added sprinkles because sprinkles make everything more fun and fix all the ugliness on your baked goods and in your life (important life lesson I learned at work). Enjoy these tiny Millie-sized treats. They are almost too cute to eat but nothing actually is because let’s be honest food is yummy.

Prep Time: 5 minutes
Cook Time: 15 minutes
Decoration Time: 10 minutes
Level: Easy Peasy

Ingredients:

  • one box Cherrybrook Vanilla Cake Mix (or other cake mix, apparently Dunken Hienz is also dairy-free) ——> TELL NO ONE A BOX OF MIX EVEN EXISTED IN MY HOUSE PLEASE!
  • one ripe banana, mashed
  • one 12-ounce can of sparkling water [I used plain from my soda streamer, but any flavor LaCroix or a white soda would also work!]
  • 2 tablespoons coconut oil

Glaze Ingredients:

  • 2 cups powder sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut milk (I used canned for richness/flavor, you can omit these fancy milks and use any plain non-dairy milk if that’s what you have on hand)
  • 2 tablespoons almond milk

Directions:

1. Preheat oven to 375 degrees.

2. Peel banana and mash in a small bowl.

3. Pour cake mix and sparking water in a bowl and add mashed banana and coconut oil. Mix.

4. Place a small amount into mini donut pan, so donut hole is only about 1/2 full. Less is more otherwise these turn out really awkward shaped.

5. Bake for 12-14 minutes, until golden brown on the bottoms.

6. Pop out of pan and cool on a cooling wrack.

7. Assemble glaze: sift powdered sugar (yes it is essential here) and add a drop of vanilla extract. Slowly add coconut milk and almond milk one tablespoon at a time until desired consistency is reached.

8.Dip the top each donut into glaze and then into sprinkles or coconut shreds.

10. Also avoid holding too close to puppies with extreme jumping skills, because they might do what Millie did and snatch it out of your hand (seriously…she got lucky this morning).
