Hello again, internet friends! It’s time for another (late winter) recent vegan eats. In these bi-weekly posts, I share some random meals/snacks I’ve eaten and happened to photograph in the last couple weeks. I also share mini reviews of any new vegan products I’ve tried.
As always, these posts are for entertainment only, and are not intended to depict an ideal or healthy diet. I hope you enjoy! Let’s get onto the recent vegan eats!
Also, I apologize for taking a little over a week off the blogosphere. Last week was insanely hectic for me for some personal reasons. I am thankful to those who have been kind. With the world being such a harsh, challenging place, I always appreciate those who practice compassion.
Anyways….on to the recent vegan eats!
Trader Joe’s Kale Gnocchi
I finally gave Trader Joe’s kale gnocchi a whirl. Verdict: it’s okay. Definately not bad. But the texture is not as good nor as doughy as the cauliflower gnocchi. I boiled mine, which is how I prepare the cauliflower gnocchi, and it was kind of crumbly; it almost looked like the gnocchi were floating and drifting apart or disintegrating.
The color is fun and they taste pretty good with marinara, but I think I’ll mostly stick to Trader Joe’s cauliflower gnocchi in the future.
Mini mandarins! Oh joy. I got a bag at Aldi for $2.29 and enjoyed eating them here and there for a quick bite of juicy sweetness.
Luna Mash-Up Peanut Butter Fudge
I tried out the new Luna “mash-up” later bar, which looked super yummy, but left much to be desired. Honestly it was kind of bland and I didn’t really taste peanut butter nor fudge in the bar. Sigh. It was okay, I just wouldn’t buy it again over my favorite regular Lunas (s’mores and blueberry). They do also have a lemon blueberry mash-up bar, so perhaps that one is better? We shall see.
I got this cantaloupe for $1.19 at Aldi and it was darn good! Look, perfectly sweet. What a win! It was such a treat.
Lazy Vegan Mac
I make this sometimes when I just want something easy and comforting that doesn’t require much effort. Basically, I just cook noodles (usually Banza), and stir in some vegan cream cheese or plain vegan unsweetened soy yogurt, and dump a bunch of nutritional yeast, salt, miso, and some spices, and stir it all together.
Honestly, it’s decent for how lazy it is. All I know is that after a long day before a long evening of grading, homework, or work, simple filling food works well for me.
Peanut Butter Sandwiches…nothing new here
More peanut butter sandwiches eaten at my desk because duh. This one in particular paired with a vegan banana chocolate muffin I bought at a bake sale to support the local vegan community and farm sanctuaries. I really have to go to Farm sanctuary! I will this spring.
Also look at how unevenly I smeared the nut butter on this sandwich. I must have been in a rush or something. Oops lol.
Gimme Coffee Iced Coffee and Breakfast Bars!
Gimme coffee is such a treat. I got myself an iced coffee and a vegan breakfast bar after an appointment I had last week. I rarely treat myself to something out just because. It was nice to enjoy a yummy beverage and baked good.
Also yes, I used a plastic cup because this was spontaneous and I didn’t have my tumblr. Yes, I rinsed and recycled it and didn’t use a lid nor straw. Yes, I felt guilty and debated even including it in this post, but I’m not perfect so I shouldn’t pretend to be. I do my best as often as I can, and imperfection is part of being human. I feel like so much seems black and white, which can intimidate people or scare them away from trying to make changes in their lives, which is a missed opportunity. Progress is important, not just perfection!

Aldi Cauliflower Gnocchi
Another gnocchi review! Gnoch on wood, I hope the next gnocchi I try is better than these Aldi cauliflower gnocchi! These tasted overly garlicky, and I couldn’t get beyond that. At $2.99 a package ($0.30 more than Trader Joe’s), I wouldn’t ever buy it again. Sigh. So it goes! Trader Joe’s cauliflower gnocchi is still my #1!
Aldi Earth Grown Vegan Flame Grilled Protein Burger
Meh! Not great. The taste was smokey, which some people might like, but it’s not really for me. Also, the texture was chewy and mushy and unappealing to me. I mean, I still ate the whole box because I don’t like wasting food, but I wouldn’t buy these again.
Also, yikes, you can see where I sliced my finger with a sharp knife in the above photo…oops.
I made this one night when I was almost out of groceries. Basically it’s a can of Amy’s tomato basil soup, with added microwaved frozen veggies and a diced potato and some cooked Banza all added in to make it more of a meal. I topped it with hot sauce and nutritional yeast and ate it with saltines. Nothing fancy, but it did the job.
CocoWhip + Graham Crackers
I cannot recommend this enough! Such a yummy treat.
