Hello again, my internet friends! It’s time for another ‘recent vegan eats’ post, where I show some highlights of recent vegan eats, and add little blurbs of what’s going on in life along the way. As always, these posts are not intended to depict an ideal diet, but rather show you some easy, affordable vegan things I eat, and/or highlight some fun stuff along the way. Without further pause, let’s get into some recent vegan eats!
This “recent vegan eats” in particular is pretty darn boring. Life has just been….stressful to say the very least. Since getting back into reality after the holidays, I’ve been under a lot of physical and physiological stressors and I haven’t been doing the best job eating and sleeping and being a human being. This year really hasn’t been easy for oh so many reasons, but I need to relax and take care of myself a little bit better! The struggle can be so real.
Anyways, all that is to say, I haven’t really eaten anything noteworthy lately, except perhaps, the vegan Banza mac’n’cheese. Everything else has been routine or eating just to get buy. I’ve found anxiety killing my appetite often lately, and after a couple days of really not feeling great, have decided I need to make an effort to eat consistently even when I feel like shrinking into a hole and puking when the anxiety hits. I’ve certainly been reminded that not eating doesn’t help my anxiety!
In fact, it often makes me feel worse, which makes me even less hungry, and creates a vicious cycle that typically results in me eating things like bagels and cereal and fruit and ice cream for dinner when the hunger that’s built up all day finally rears its head.
Over the last couple of days I’ve really implemented consistent meals and snacks every 3-4 hours and plan to keep this up. Gotta get that glucose to keep the brain and body functioning at its best!
I also truly need to work on sleeping, because that’s been wonky, too. Luckily, today was a snow day, so I worked from my bed for 12 hours, which although not entirely stress-free, was still less stressful than having to venture out into a snowstorm. Rest + food = important.
And here I am, still rambling. Let’s see what (if any) exciting things I’ve eaten lately.
Cinnamon Roll Tortilla
Okay, so I invented this snack and I am obsessed with it. It’s nothing fancy, but it is oh so good. Basically, I warm up a whole wheat tortilla, and allow a hint of non-dairy butter to melt onto it immediately after heating. Then, I sprinkle it with oodles of cinnamon and a hint of raw or brown sugar, roll it up, and eat it. It is SO good; it is far better than it has any right to be. Any sweetener would work, as would any nut butter. I’ve also done this with almond butter and maple syrup and although that’s arguably a different creation entirely, it’s delicious nonetheless.
Banana Cinnamon Roll Tortilla

Basically the same thing as above, but with a warmed up, mashed banana (microwave banana for ~30-50 seconds separately before mashing) spread onto the tortilla before rolling. Oh my goodness. Try this and thank me later.
Actually, as I’m writing this, I just realized this is essentially my banana quesadilla, but rolled up, which maximizes the snack-ability factor. Thumbs up all around.
Banza Vegan Mac and Cheese
Banza sent me some of their new vegan mac! It was pretty good. My favorite vegan boxed mac and cheese will forever and always be Earth Balance (which no longer exists), but this was probably the only vegan boxed mac I’ve had in recent years that I would actively repurchase.
I think it could be a wee bit tangier and cheesier (though I do have a really vinegar-heavy palate), but with some pepper, a mountain of nutritional yeast, and some Green Dragon sauce (from TJs), it was darn tasty!

A fruit cup + a bagel

The building I live in had free bagels the other morning, so I snagged a cinnamon raisin bagel and a fruit cup. I ended up saving the bagel for later (I had already eaten breakfast) and eating it late at night with almond butter. Anyways, fancy fruit is a luxury (it’s a primarily apples/bananas-only-says-my-budget-season-of-life) so I happily enjoyed these treats.
Peanut butter sandwiches

Justin’s Vanilla Almond Butter Sandwich
The same, but different. Justin’s vanilla almond butter is SUCH a treat to me (it tastes like frosting in my humble opinion). I get it if I can ever find it on mega-sale.

A very not-great doughnut

Sigh. This was kinda bad, to be honest. To me, unless doughnuts are done really well, they’re just kinda icky. It tasted like it had been sitting in old oil for a while. Very greasy and fried flavor. The edges were like, almost crunchy/chewy from being a bit burnt. Meh. On to the next.

Aldi Pineapple Poblano Guacamole
Oh wow, this is good. It’s got that sweet-spicy-tangy thing going on. I think it could be a little spicier, so I added Green dragon sauce to mine (of course), but I still inhaled this tub in two days.
I used it as a veggie dip, and used it to garnish some black bean/corn wraps. For the wraps, I just heated up canned black beans and frozen corn and some spices, tossed it in whole wheat tortillas, added large dollops of guac and enjoyed with plenty of hot sauce.
More peanut butter sandwiches, bananas, apples, Nugo bars, and baby carrots for lunch

Because I’m a creature of habit and pack school lunches like I’m a 10-year-old, when in fact, I am almost 30 and somehow still in school.
Trader Joe’s Black Bean and Corn Enchiladatas

Oh my gosh I am salivating looking at this photograph. I had two packages in my freezer and ate them both in under a week. I need a TJs trip, stat!
Silk DHA Omega-3 Oat& Almond Milk

I bought this for the nutrition stats. I try very hard to eat a properly balanced vegan diet, but I feel like some days I slack on omega-3s (DHA in particular) and need to supplement (if I feel like I’ve been doing poorly consuming omega-3s I take a bit of algal oil).
This stuff has plenty of DHA, 6 grams of protein per cup, as well as vitamin B-12, and calcium! And it’s tasty, too (I’ve been using it in coffee).
Vegan Pumpkin Ice Cream with CocoWhip
I found some on clearance at Wegmans (leftover from the holidays, but it still tastes good to me!), and since I have been trying to eat a bit more, have been enjoying it with CocoWhip. Here’s a super lame photo of an almost-finished bowl.
I realized looking over this post that I haven’t photographed a vegetable in weeks. I assure you I have been eating tons of veggies (I eat a large green salad with roasted veggies as sides to all of my dinner meals) but I guess I just haven’t ever thought of taking photos of them.
This just goes to show that what you see online is not a complete picture of my diet, which is why I always say, these posts are never intended to show you how you should eat. You know yourself better than I do!

This Trader Joe’s Kale Gnocchi, which I just got gifted to me by a friend! I’m excited to try it. I’ve heard it’s amazing and I’ve also heard it tastes like grass. I will report back with my opinion in my next vegan eats recap.

I recently celebrated our 6-year “Gotcha” day with Millie. The first pic I ever took of us together still makes me smile! She’s the absolute best and deserves an award for putting up with me.

“Maid” by Stephanie Land, and I can’t recommend it enough. Do you have any good book recommendations? I rarely read for pleasure because my reading load for work/school is so intense, but I am looking to read more in the coming months as a form of relaxation!

Congrats on another year with Millie 🙂
I’ve been reading Secondhand by Adam Minter. It’s about how people’s used stuff (furniture, clothing, etc) moves through the world and what happens to it. It’s fascinating! I’ve started listening to the audiobook of The Sixth Extinction by Elizabeth Kolbert, which is interesting but I suspect will have some sad parts (mass extinction due to human activity…yikes). For lighter reading, I’m also listening to the podcast Audiomorphs, which is basically an Animorphs audiobook. You are around the right age to have read the Animorphs series–do you remember those books? I know they were written for young adults, but I’m enjoying listening to the stories again.
