Hi there, good friends of the internet! It’s time for another ‘recent vegan eats’ post, where I show some highlights of recent vegan eats, and add little blurbs of what’s going on in life along the way. As always, these posts are not intended to depict an ideal diet, but rather show you some easy, affordable vegan things I eat, and/or highlight some fun stuff along the way. Without further pause, let’s get into some recent vegan eats!
I am sitting here typing this up on my birthday night, reflecting on the past year. Holy moley. I have had the highest of highs and the lowest of lows. It has been a journey.
The past couple of weeks especially have been a lot! A lot of fun, struggle, joy, saddness, hope and growth! I feel like I’ve had wild realizations in the past couple weeks and so much of the past year of struggle feels like it’s clearing up. I’m feeling genuinely excited and optimistic for the first time in a couple months. Hooray! I will share more details for the upcoming year soon, but big shifts are coming and I am thrilled.
Now, on to the eats!
Vegan Conference Food
I spent the week of January 6-10 in DC at the NCSE conference. I was delighted to find out that all of the food at the conference was vegan or vegetarian! It made my heart and my tastebuds very very happy indeed. Kudos, NCSE!
My favorite was probably breakfast. Because I adore fancy fruit and bagels. And the bagels were excellent. And they had almond milk out for coffee. Right next to the half and half and skim. I don’t think I’ve ever been to a catered event that had a non-dairy milk out for coffee by default. Amaze.

A couple highlights:
- Seeing a couple young activists speak.
- Learning about effective climate communications.
- Learning about how to tell if purchasing a carbon offset is a scam or not.
- Learning about science communication through comedy.
- Meeting new friends and seeing some old ones!
- Feeling motivated to actively work to combat climate change!
Trader Joe’s Harvest Chilli
My sister bought a tub of this for my mom and I. It was so yummy! We served it with nutritional yeast and hot sauce, with salad and toast on the side. Delish!
I grabbed this in DC for lunch on my last day on my way to the airport. It was the first time I actually really enjoyed sweetgreen. I’m still a JustSalad girl, but this was yummy. I mixed together romaine and mixed greens, crisp and crunchy apples, raw beets, roasted sweet potatoes, and sesame roasted tofu, with their house-made hot sauce and mustard maple dressing, which was delish! Paired with bread, obviously.
Nugo Slim bars
I LOVE Nugo bars. They are probably my favorite protein bars. Nugo slim bars were on sale at Whole Foods, so I decided to try them, and packed a couple Mint and Peanut Butters for traveling.
Verdict: Nugo bars taste like candy, and Nugo slim bars taste like…..protein bars. I definitely prefer the regular Nugo bars and will most likely buy those over the slims most of the time. The slims have more protein, but my taste buds much prefer the regular!
Vegan Walnut Brownies for One
I whipped up some lazy brownies the other night when we were low on “snacking chocolate.” I realized after sharing a post on my Insta story that I should actually experiment with this and write down a good recipe for the blog. Soon!
Peanut Butter Toast with Banana Slices, Salt & Cinnamon
On a toast-for-lunch or second breakfast kick. So simple, so good.
Vegan Buffalo Temepeh
Recipe coming very soon, I promise! I made this earlier this week and it was delish. I enjoyed some plain dipped in guac, and then took some over to my sister and her husband’s house for dinner, where we made it into wraps with whole wheat tortillas, more guac, lettuce and more hot sauce.
In addition to the wraps mentioned above, I also brought over a vegan salad nicose. Mustardy dressing + boiled potatoes = yum!
Avocado Toast with Nutritional yeast
Nutritional yeast is a game-changer for avocado toast. When you know, you know. You know?
Trader Joe’s Chocolate Hummus
So I decided to try this and at first I LOVED it. I really enjoyed eating it with bananas and peanut butter. Towards the end of the container it tasted less good to me. But I’d still buy it again!
Kix with Almond Milk
Back on a kix kick. Is there a better cereal?
Oh my gosh. So cute, right?
Beans and Barley Pancakes
Vegan blueberry. With peanut butter, and a side of fruit. And maple syrup, of course. There are no better pancakes, in my opinion!
Vegan Cowboy Cookies
Starbucks Iced Coffee with Soy Milk
The annual Starbucks free birthday drink = a highlight of my birthday every year. Yum!
I had to take Millie to the vet on my birthday, so to perk her up (and because it’s a birthday tradition) we got froyo after. I got her some yummy blueberries and strawberries and a dollop of peanut butter and I got some chocolate fudge sorbet with salted pecans. Yummy. I had a few bites and put the rest in the freezer for later.
Beans Black Bean & Sweet Potato Burrito
For my birthday, we went to Beans (of course). I wasn’t in the mood for anything fancy so we just had a casual dinner at Beans & Barley. I got the black bean and sweet potato burrito and a side salad. The burrito was a bit limey and not as good as usual (usually it’s a 10/10…this was more like a 7/10). Oh well!
We got all the condiments.
Vegan Carrot Cake
After dinner we ate vegan carrot cake with cream cheese frosting at my sister and her husband’s house.
I ate too much cake because it was sitting in front of me so I just kept picking at it. I also ate too much CocoWhip and vanilla coconut ice cream. I felt a wee bit ill. So now I’m sitting here, a bit bloated, typing up this post, waiting a couple hours before I go to bed, hoping to outsmart the GERD beast.
