Hello internet friends of my mind! It’s been a couple weeks so I thought I’d do another recent vegan eats. In this mini-series on my blog, I take a break from facts and recipes, and share little bites of my life and every deal meal and snack ideas along with the occasional interesting food highlight.
I have been busy and stressed and anxious lately and not on my phone as much (in fact I’ve taken a couple weeks of Instagram here and there) so I may not have photographed all of my foods. In fact, I realized while typing up this post that I included very few dinners/meals (hanger happens), but as always, this is just a random compilation of food choices meant to review new products, and offer budget-friendly plant-based meal ideas to you all, and is never intended to depict an ideal or perfect diet.
Okay, now on to the eats!
Toaster waffles

On a serious kick lately! I get Vans or natures path or 365 brand when I can (both are vegan) and top with nut butter, cinnamon, bananas, and real maple syrup.

Amy’s burritos

These were on super sale at Wegman’s and so I got myself some to keep on hand. I love all things Amy’s and these are great for when I feel like I need to mix things up and/or don’t want to think about lunch or dinner.

I tried the new Tagine wrap. It was good! I still think my favorite might be the tofu breakfast burrito – that is a true gem. I love amys burritos because you can get them without rice. While I like rice I feel like sometimes in small frozen burritos it just takes up half the potential flavored filling space, so I appreciate that amys has options.
These burritos run a bit small to fill me up for a meal, so if I eat them for dinner I always pair them with avocado, salad, beans, and/or veggies. Yummy!
Peanut butter and banana sandwich…dipped in syrup?

Im not sure how or why I did this the other day. But my stomach was feeling really off and it sounded good. And it was. Basically I just dipped my peanut butter & banana sandwich in a wee bit of maple syrup. I was really craving sweet and my stomach felt super off so I followed my cravings which lead me here. Honestly, it was good. A little sweet for the everyday in my opinion, but I wouldn’t not do it again if that makes sense…ha!
The last of the Pumpkin Spice Chocolate Chip Cookie Dough Balls:

I’ve been slowly eating these Pumpkin Spice Chocolate Chip Cookie Dough Balls (made with beans!) out of my freezer and finally finished them. Perhaps another batch is in order!
Hummus Sandwiches

I’ve had a lot of event things on campus over lunch hours recently. A perk of these events is that they often include free lunch. It seems most campus groups get catering from Ithaca Bakery and/or Wegman’s, so I’ve been eating many of these hummus sandwiches from Ithaca Bakery, and/or random salads and grain salads from Wegman’s (see below). Zero complaint! This stuff is tasty enough and I go nuts for free fancy fruit salads.
There is something I love about hummus sandwiches. So simple, wholesome, and nostalgic to me!
Salads and Grain Salads (more catered lunches)

More free lunches! I usually load my Tupperware up with the salad du jour (it changes), a grain salad that has mangoes, green beans, cashews, and frizzled onions and a punchy vinaigrette (I have to recreate this!), oodles of nuts, and tofu when available. Yummo.
This particular salad was Thai-inspired, and had lots of cashews, herbs, and veggies with a spicy peanut dressing. Another salad I need to recreate! #inspiredbywegmanscatering…lol!
Tea!

I can’t get enough tea lately! I crave it in the morning over coffee recently. Who am I?! I DO still enjoy my coffee, but often a couple hours later. My current favorite teas are green tea and Celesta Seasonings Lemon Zinger (true fun fact: I toured their tea factory in Boulder, and it was neat)!
Wraps!

I have been loving wraps for lunches on the weekends lately. I like to do whole wheat tortillas and have one savory wrap and one sweet wrap. Savory wraps usually have some combo of hummus, other dips or spreads, avocado, veggies, nutritional yeast, and condiments. Sweet wraps typically have nut butter with cinnamon and banana or apple slices, and occasionally a dash of syrup if I’m feeling crazy. I have also been LOVING vegan cream cheese with raspberry jelly lately!
Jersey White Sweet Potato

This was a new-to-me sweet potato variety! I had to try it. Verdict: I loved the texture. The flavor was good too, but very neutral. Japanese sweet potatoes remain my favorite!
Vegan Chai Doughnut

From One Ring. Tasted like fall! I had a couple of these during the month of October. I have to get back to One Ring soon to try their November vegan flavor, double chocolate!
Apples!

I still can’t get enough of the orchard fresh apples around here! If you ever see Snap Dragon apples near where you live, GET THEM!
Bonus: Millie as “Millie Eilish” for Halloween

Not a food but a worthwhile update to post! Millie went as Millie (Billie) Eilish for Halloween!

She was very tolerant of being dressed up, probably because I didn’t make her get off the heating pad. Ha!
Pumpkin Spice Nut Pods

My friend Alexa gifted me a couple of these Pumpkin Spice NutPods and OH MY GOSH. It is SO GOOD in iced coffee.
Aldi Cold Brew

Speaking of iced coffee, this cold brew is $2.99 from Aldi and delish!
Aldi Knock-off Thin Mints

When I saw these for $1.36 at Aldi I had to try them. I don’t love chocolate mint stuff…but I adore Thin Mints (nostalgia?). The Aldi version is quite good! Not as crunchy as “real” Thin Mints, but if you pop them in the freezer, they get a bit crunchier, and at such a low price, they really are a find. Yum!
Peanut Butter

A staple for me! But I felt like including this in the roundup because I recently had this weird epiphany that peanuts are legumes so peanut butter is actually legume butter and not not butter (insert mind-explosion emoji here)!
NuGo Bars

A satisfying snack when I’m running around campus all day. These taste like candy. Yes, they have sugar and are processed, but heck – they taste good and hold me over in a pinch! I usually have a couple bars and raw almond in my backpack at all times for hanger emergencies.
Bananas

Obvi!
Cornflakes

Eating this very bowl as I type of this post! Cornflakes are super cheap at Wegman’s ($1.49 for a family-sized box) and I’ve been really into them lately. I think maybe because I haven’t previously eaten them I years? Anyways, nightly cereal with chilly almond milk will forever have a special place in my heart.
