Hey there internet pals! It’s time for another recent vegan eats and another bonus WIEIAD. I decided I may do a couple more even though I find them odd. More than anything, I find video a fun medium to play with, and it gives me content to edit.
Before we dive in, I want to address my post frequency (or infrequency) recently. I’ve slowed down a bit since the summer time, simply because moving/adjusting to a PhD program/getting in the swing of things and juggling research, classes, TA-ing, graduate student orgs, and being a human/dog mom in a new town while being homesick has been…a lot! I’m trying to post at least once a week, and striving to value quality over quantity.
I decided I’d rather post once a week than have 3 crappy posts a week. So for now, that’s what’s going on. If you have post requests, leave a comment below or say hello to me on Instagram, Twitter, or YouTube.
Okay, now read on for recent vegan eats featuring some visiting fam!
Apples

Once again, starting off a recent eats post with apples. Holy yum. The apples around here this time of year are incredible! I’ve been snacking on them daily. SnapDragon apples are a delicious new-to-me variety that have been fun to add to my apple rotation.

Other than that, fresh Fuji, Jonagold, golden ginger, pink lady, Cortland and gala have been my favs. What are your favorite apples? Tell me so I can try them!
Creamy Cheesy Vegan Pumpkin Pasta

Purple Sweet Potatoes with Almond Butter

I love this as a snack or as a side with dinner. Any variety of sweet potato will work, I just recently bought a bag of purple and have been enjoying them. Japanese sweet potatoes are still my favorite variety, but purple are easy to find and super delicious this time of year. And also, the hue! My goodness. So vibrant.
Maple Oreos

Everyone raved about theses and I thought they were just okay. A tad too sweet in my opinion! Also I’m very pro-real maple syrup and very much less hyped about fake maple syrup or artificial maple syrup flavor. Sigh. I ate the whole box but probably wouldn’t buy again.
Banza Bow Ties

If you know me, you probably know I’m a Banza super-fan. Never sponsored, but I talk about my love for them quite often. The nice folks at Banza sent me some of their new bow tie shapes to try, and I’ve been enjoying them! With marinara some nights, and other nights with simple olive oil, salt, frozen green peas, and nutritional yeast.
Peanut Butter Sandwiches

Still love them as a desk lunch entree, forever an always.
Almond Butter Sandwiches

For days when I’m really feeling adventurous. Trader Joe’s raw almond butter is my favorite!
Toaster Waffle Peanut Butter Sandwiches

I know, I know. I’m really getting crazy with my packed lunch variety. One day last week I treated myself to two Van’s toaster waffles with peanut butter and Justin’s chocolate hazelnut butter. So good! Who else loves toaster waffles?
Family fun…!

Last weekend my sister, her husband, and my nephew made a semi-spontaneous trip to visit me, which I so appreciated! We spent lots of time outside hiking and walking.
And eating, of course!
Vietnamese food

On Friday night (which was Tyler’s birthday) we stopped at a local brewery to celebrate their arrival and Tyler’s birth!
Then we grabbed a late dinner of Vietnamese food. I got an order of spring rolls with peanut sauce and a salad with cabbage, fried onions, crushed peanuts, tofu, bean sprouts, and a punchy tangy vinaigrette. For some extra yum, I added what remained of my peanut sauce, because peanut sauce is life.

Jenn and Tyler also split spring rolls and got tofu vermicelli and veggie pho. We all agreed the spring rolls were a total dud, but everything else was super yummy! I have to recreate a version of the salad. In fact, Jenn did just this week! Haha.

Millie also got to meet her human cousin. What a night!
Angelhearts Diner Vegan Salads, Burgers, and Doughnuts!

Saturday after a hike we had a super late lunch at Angelhearts diner, which is a new vegan diner nearby. They are still in the soft-open stage and we got there around 2:40pm on a Saturday (they are currently open 8-6), and they were out of a couple things we wanted and only had a soft-open menu, but what they did have was great! We got two salads, a beet burger, a Philly cheesesteak style sandwich, tofu buffalo bites and a doughnut!

The standouts were the best burger, the super fresh local greens in the salad, the buffalo bites (these were incredible but escaped my camera because I was very hangry and inhaled them), and the doughnut, which looked unassuming, but was super fluffy and not at all greasy!
Overall we were very satisfied and I am happy to have a closest vegan restaurant. After being spoiled for choice in NYC for so many years, I’m just thankful for this place. I will continue to support them!
Neapolitan pizza and salads

Saturday night we got pizza and salads at Thompson and Bleecker! Everything was fresh and delicious. A little pricy, but good. Neapolitan pizza is by far my favorite style and it’s something I can’t easily make at home.

We split two salads and three pizzas (a regular margarita for my sister, and a marinara and a vegan Margaret with Mykonos vegan cheese on it).

The marinara and the vegan cheese pizza were both good! I’m not a huge cheese person, but Mykonos is some of the more excellent vegan cheese. Yum!
Gimme! Coffee vegan breakfast bar

I grabbed this while picking up coffee for Jenn, Tyler, and I and holy cow it took us all by surprise. It looked so unassuming but was so delicious! Full of dried apples, oats, raisins, and nuts with an almost butter flavor. So good! I need to recreate these.
Farmer’s market picnic

On Sunday morning (post gimme coffee bar) we walked around the farmer’s market and got some fresh bread, salads, a crepe, and some apples for a little mini picnic. Yum! Fresh produce can’t be beat.
Pickles

We did a Cornell orchards cider tasting. I don’t really drink, but got really exited for cider snacks, like pickles and nuts.

And in the orchard store they had…you guessed it! More apples. And instead of apple samples they had sample apples. You read that right. Aka full apples as samples! Yum! I had about a zillion.
Pumpkin spice chocolate chip cookie dough dip…

And balls.

Cheerios with almond milk

I’ve been alternating Cheerios (well, Wegman’s organic O’s) and corn flakes as my nightly cereal. Yummy!
Bananas and nuts

….lol. As seen on this miral by Millie. Girl knows her food, even when it’s just a painting.
Not food but…
