Buckwheat Oatmeal Waffles
Last weekend I realized I hadn’t made waffles in a hot second. So, I decided to change that! Vegan buckwheat oatmeal waffles were enjoyed with banana slices, peanut butter, and real maple syrup. Yum. I will share the recipe soon!
Vegan Salad Nicoise with Mustardy Beans

Vegan Italian Cookies
Filled with jam and dipped in yummy dark chocolate, dressed in sprinkles. Delicious and so nostalgic! Recipe here.
Trader Joe’s Organic Black Bean and Corn Enchiladas
Still the best lunch $2.29 can buy. I swear these are Amy’s brand contacted to TJs. Conspiracy theory! Cue suspense music.
Served with steamed veggies + hot sauce.

Vegan Egg Sandwiches
On fresh, local bread from Rocket Bakery with tomatoes, basils, and Violife aged cheddar. YUM.
Vegan Scrambled Eggs on Tortillas
With nutritional yeast and hot sauce. Delicious, simple, and different snack. Eaten while getting ready to head out the door.
Cauliflower gnocchi + salad
Ate the whole bag in one sitting, of course; I always do! Anyone else?
On this evening I just wanted something simple so I topped the gnocchi (I boil it) with nutritional yeast + salt. Served with salad.
Vegan 3-Ingredient Pudding
An old favorite! I used to make this all.the.time. but hadn’t made it in ages because my old food processor was sooooo dull and broken for so long. Now that I have a nicer newer one I decided I needed pudding! I added some shredded coconut and coconut whip for extra fun. I may refine and re-share this recipe soon. SO GOOD.
Last week I met some friends at a newer vegan tapas eatery, Strange Town. I wanted to love it, but found it just okay. Nothing spectacular and very expensive, IMHO (for example, hummus was $12…meanwhile it is $5 and far better at Beans and Barley).
We split a bunch of stuff. Lots of it was mostly rice. I liked the Tacu Tacu (above). $9 for something as small as a single veggie burger patty….didn’t love that so much. So it goes!
The cauliflower was basically cauliflower fried and tossed in spicy marinara sauce. Different. Kinda good. Service was also just okay. Had a great time with my friends though!
Beans & Barley Chocolate Peanut Butter Cake
After Strange Town we took advantage of the gorgeous evening and walked around Millwaukee’s east side, and of course ended up at Beans & Barley (shocking, I know). They had a single slice left of their chocolate peanut butter cake and I actually danced when I saw it (my friends can vouch for this). DELICIOUS!
Hummus + Pita Bread from Damacucus Gate Restaurant
My sister and her husband ate there on Thursday night and brought my mom and I some hummus + amazing flatbread. Good stuff! Different and delicious. The pita bread, especially, was incredible, and tasted like it had been cooked on an open flame (I’m such a sucker for a good flat bread).
Damascus Gate is run by Syrian refugees and has a great mission. I need to go back there and eat other things; my sister said the falafel was incredible!
Veggie Snack Plate
Typical quick lunch: leftover roasted sweet potato (added almond butter post-photo), leftover salad (I prep huge salads to eat with dinner when I’m at home at my mom’s and often eat leftovers the next day for lunch/dinner), Rye crips from Ikea, hummus, cauliflower and nutritional yeast + salt.
I ate a banana and apple sliced with lots of peanut butter after this because I like to end meals with a sweet something, which is usually fruit at lunch.
Another veggie snack plate for lunch
This one with a half brick of flax tempeh, leftover fresh corn, salad, and sweet potato. Eaten with Trader Joe’s green goddess dressing +hummus (added post photo) and I’m sure I ate fruit after this of some sort because that’s just what I do.
Only took a pic of the dough but dang they were tasty. Are you team oatmeal in cookies? I most certainly am.
Free food handed to me when I was hangry…except these were too sweet and made me feel icky (what happens if I eat overly sweet things when I need a meal).
Tofu lettuce cups
On Saturday at 4:30pm my sister called and said they had a lot of veggies from their CSA box that they needed to use up and asked for my mom and I wanted to come over for dinner. Apparently, I’m that girl you call when you need veggies eaten. Love that for me.
Tofu lettuce cups with avocado happened. Millie being a diva also happened.
After dinner we went to Baskin Robbin’s. I tried the new non-dairy Chocolate Extreme flavor, with added salted pecans, of course! I’m a big salty-nuts-on-ice-cream kind of gal. We went their to try the new vegan cookie dough flavor, which they told us they had when we called, and then they didn’t actually have it when we got there.
Womp womp. But this was still great! Yay. A little sweet, but good. Sometimes it’s nice to have vegan options that aren’t fruity sorbets at chain ice cream shops.
There’s just something so fun and celebratory about going out to ice cream. I love it so much. Ice cream = happiness.
Went to MKE Brew fest even though I don’t drink….probably not an event I should have expected I’d love, especially on a 90+humid day. You can see how sweaty I am in this photo…Haha! I got a massive headache, BUT the pretzel necklaces, hanging with my sister, and running into my good friend Jake made it a good time!
In other news…
We took a little pup named Chico (we renamed him Nico) home from the Wisconsin Humane Society last Saturday. We were told he was abused and was surrendered to the Humane Society after the abuse lead to injuries including the loss of his left eye. Poor guy! He is 7 years old and leery of many humans, but is enjoying living in our house with me, my mom, and Millie!
So far, Nico likes walks, sniffs, homemade doggie froyo treats (recipe soon), naps, being attached to me or my mom, and barking whenever Millie barks even if he doesn’t know what he’s barking at. Haha!
Millie is being very kind and accepting. Go Millie! She is also getting extra attention and solo trips to the park, Panera, froyo, and Auntie Jenn and Uncle Tyler’s house (also because Nico doesn’t do well with most humans as of yet).
Nico will live primarily in Wisco with my mom. They make a good pair. I’m so happy he has found happiness and joy; it is heart-melting to see him come into himself and to smile.
Lately I have been very anxious and found myself scrolling online too much, which wasn’t helping my anxiety. I set a screen time limit of 8 minutes for social media per day on my iPhone. It helped me keep in check with mindless social media app opening/scrolling tremendously! I barely went on Instagram last week and didn’t even want to some days!
You can easily override your limit and “add 15 minutes” but it’s a useful tool to keep your social media/phone use in check. Who knows how long I’ll be online less, but for now, this is working for me!
In other news, I leave Milwaukee soon! Boo! That said, I am also feeling excited and ready for a new adventure and fresh start.
