Tofu Veggie Stir-Fry

The other evening I marinated tofu in a mix of soy sauce, liquid aminos, coconut aminos, sesame seeds, a dash of sesame oil, a healthy squirt of Sriracha, some maple syrup and some ginger (I eyeball the whole thing and adjust, tasting as I go), and let it chill in the fridge for a bit.

A few hours later after some chaos, I baked it off at 425 for 30ish minutes and served with Trader Joe’s quick frozen rice and a stir-fry veggie mix steamed in the microwave using Stasher bags (which works perfectly!). Trader Joe’s Soyaki sauce and more Sriracha and TJ’s green dragon sauce were added on top. I ate this bowl times two. Yay FODMAPS and bloat and gas.

This was a perfect super quick meal after a long evening pup scare that involved two trips to the ER vet. Sometimes fast and tasty is the way to go.

Beans and Barley Salad


We got Beans to cater my sister and her husband’s baby shower. It was a super scrumptious home run slam dunk, to put it mildly. Almost everything went…except a bulk of the giant salad we bought. So I took it home (along with their magnificent homemade balsamic) to munch on over the courses of a few days.


Can you believe the whole tub for 30-40 was only $18?! Talk about a deal! I used it to make giant salads, and paired it with fruit and Panera dressing for a snack….


…And enjoyed alongside Japanese sweet potatoes with almond butter and hummus for a quick lunch. Yum.

A Celebratory Graduation Dinner at Celesta


Last Friday I had a celebratory graduation dinner with my mom, sister and her husband, and my dear friend since toddlerhood, Jimmy! It was a great time. Celesta is a one-year-old female-owned completely plant-based restaurant on Milwaukee’s east side, and my sister’s husband raved about it, so I was super excited to check it out.


We started with the Bang Bang Broccoli, which I LOVED…


….and some Cauliflower dish that was good, but not really my taste.


Next up: I sampled some Vegan Fish Fry, which was made from tofu. It was yummy! I’ve never in my life had fish fry. My favorite part was the house-made tartar sauce which I’ve also never had – holy cannoli that was good! Any condiment that tastes like pickles is a win in my books. I also love a good roasted potato, so this was an awesome side for my tastebuds too.


For my entree, I had the Buffalo Tofu Sandwich on sourdough with a slaw that had ranch on it and came with a legit kale salad on the side. I love buffalo anything and I love tofu, and I also love bread, so obviously this was a home run for me. I also really appreciated that the side salad was a proper, thoughtful salad with sliced cucumbers and carrots, onions, and golden raisins, and a nice dressing, and not just some random wilted greens with a splash of bottled dressing on it (like some side salads you get).

Dessert was a S’mores bar, which I ate too much of, and a frozen twix thing, which wasn’t as good as the s’mores bar, but I still ate it. I want to go back for brunch and to try the cakes and tarts!

I’m super happy Celesta is here and can’t wait to watch it grow and thrive. Everyone in our party (two vegans and three non-vegans) enjoyed their meals a lot. Congrats to you, Celesta; you’re an inspiration!

 Banza and TJ’s Cauliflower Gnocchi

Nothing new to see here, folks. One notable new element: I combined them one night. Because decisions are hard.


Every season is iced coffee season in my humble opinion, but summer is extra iced coffee season. Venti iced coffee, light ice, with extra almond milk and a splash of soy is my order. Thanks for asking.

PS: Straw is a Softy Straws. I love them!

Kix Cereal with Almond Mix

The perfect after dinner snack. I love me a plain crunchy cereal with chilly almond milk on a warm night. So tasty!

Trader Joe’s Organic Creamy Cashew Fiesta Dip

I’ve been curious about this for a while, and finally recently gave it a whirl. Verdict: it’s okay, but not amazing. In my humble opinion, it lacks a strong cheesy flavor. That said, heated up, it does kind of taste like fake nacho sauce. It was pretty tasty on Whole Foods 365 brand version Wheat Thins, and I mixed it with some hummus warmed up as a cracker/veggie dip.


I also tried it drizzled over some noodles, to see if it’d work as mac’n’cheese-ish? It was again, decent, but didn’t super excite my tastebuds. Adding extra nutritional yeast  and melting some Chao on top helped a bit!

Panera Strawberry Poppyseed Salad


I love this salad. It has been a summer staple since childhood. Hot tip for vegans: sub chicken for avocado.

Rice Pudding


I whipped up some random rice pudding with leftover rice one night. It was basically rice with unsweetened soy milk, two heaping tablespoons of brown sugar, a 1/2 tablespoonish of corn starch, a dash of cinnamon, almond extract, golden and regular raisins, and slivered almonds. Heated over medium and stirred to until thick. It was pretty decent for being made on a whim! At least my preggy sister liked it. Haha!

Fruit Fruit Fruit


All the fruit, please and thank you! People who have never lived in the city without a car will never understand the true luxury that is taking home a whole watermelon in your car while buying other groceries and not having to carry it home!

Beans and Barley Pancakes

Yum! I met my friend from grad school who is also from Milwaukee at Beans and Barley this week for breakfast. Beans is simply the best! I got vegan blueberry pancakes with a side of fresh natural peanut butter, a side of fruit, real maple syrup, and unlimited coffee for $9.50. Can you believe it? Me either. Amazing.
