Random Eats Lately

Hey hey! How’s it going? I’m just popping in to share some random meals and snacks I’ve been into lately. I love reading these posts because they inspire meal and snack ideas in my own life, so I hope to inspire some of you. Let me know if you like these kinds of posts! They’re fun to write so I’m happy to share more like them.


This past week was particularly emotional and stressful and chaotic in school, work, career stuff, and with some family stuff too, and I ended up getting a killer migraine on Friday, which I took as a signal that I need to take a step back and relax for like, a hot second. All that to say I wasn’t as motivated to post serious intensive content this weekend and wanted to write something bubbly and fun. Now on to the food:

Avocado Toast from Mathew’s Food & Drink

Last weekend my friend Raag came to visit me in JC and we got brunch at Mathew’s. I got the avocado toast and it was one of the better avocado toasts I’ve had. Ever since Vital Root changed (ruined) their avo toast, I’ve been looking for a new avo toast bae and I think I found it.

It came with whipped avocado, fresh peas, radish, pickled shallots, and poppyseeds on toasted sourdough. The fresh peas added a nice pop of sweetness that contrasted nicely with the tangy pickled shallots. And I’m a sucker for poppyseeds so I was so into this. Paired with a side salad and some shared tater tots.

Ripple Foods Yogurt Bowls

I bought some Ripple Greek style yogurt recently and was excited to try it. Verdict: decent, but doesn’t taste like Greek yogurt. The thickness is there, but I want that TANG baby. Also, it was a wee bit gritty.

With bananas, homemade banana bread granola, berries and goobs of peanut butter on top, however, it was a satisfying snack for sure. Still think I prefer Kitehill Plain Greek style yogurt, but the search for a perfect vegan Greek yogurt continues…

Dominican Food From Malecon’s

Our department has lunches a lot, and about half the time it’s pizza that makes Chuck’E’Cheeze’s seem gourmet, and the other half of the time, it’s Dominican food from Malcron’s. I think I’ve eaten Malecon’s for lunch 3 times in the past two weeks. In a BYOTupperware bowl with BYOUtensils, of course (department policy).

I oddly love their shredded lettuce salad with cabbage, corn, avocado and tomatoes. Paired with beans, rice, pico, and fried plantains. Mmm. >> (shitty) Pizza any day.

Bread from Prato Bakery

A local bakery I’ve fallen in love with. I love that every time I go in, I hear patrons and the owners speaking Italian. Makes me feel like home.

I usually just go in for a loaf of bread. I tell myself I’m going to make it last all week…but usually half the loaf is gone within 24 hours. Nothing like fresh bread, I tell ya.

Cookies from byChloe

Even though I think some of their menu is hit or miss, I’ve always thought byChloe CRUSHES the cookie/cupcake game. I met my friend for coffee in the West Village today and grabbed some cookies after. An ooey gooey Classic Chocolate Chip, a Peanut Butter Everything, and a Cinnamon Expresso Chip (which turned out blurry in the pic sorry) shared between the two of us. Yummo.

In case you’re wondering what I do recommend from their normal menu: The Pesto Meatball sub is my favorite, and the Quac Burger is pretty good too. I also love the Air Baked Sweet Potato Fries with Beet Ketchup + Chipotle Aoli. I want a gallon of that Beet Ketchup. Desserts are MONEY minus the ice cream. I especially love the Chloestess Cupcake and all the cookies. I don’t care for their mac’n’cheese (doesn’t taste cheesy to me?) but I have a lot of friends who love it, andΒ I say skip the salads, because I don’t like greasy heavy salads, but if that’s your gig, I say go for it dude.Β Β

Roasted Veggies

I had a bunch of leftover veggies from an event that I roasted on Saturday. I stood over the pan and just ate them all straight off it. Hot. As a snack. No regrets. Going to roast more tomorrow and maybe put some on pasta. I’ve been craving pasta lately and need to satisfy myself with some noods soon.

Strawberry Almond Butter Oatmeal Crumb Bars

Lemon Blueberry Whole Wheat Pancakes

Lately I’ve been making batches of pancakes on the weekends and freezing them to reheat during the week. I usually just combine 2 cups Bob’s Red Mill Whole Wheat pancake mix, 1 1/4-1/2 cup almond milk, a tablespoon of flax + a big handful of frozen blueberries and juice of one lemon if I’m feelin’ fancy. So easy and so delish.

Peanut Butter Sandwiches + Bananas

…Which is basically what I survive on Monday-Thursday. A solid reminder that Instagram is a highlights-reel, not what people eat for every meal everyday.

Also, I just love peanut butter sandwiches. So eating them often doesn’t bother me in the least.

Plantains, Potatoes, Black Beans + Avocado


Still obsessed with this flavor/texture combination. So good and so satisfying.


Can’t get enough cantaloupe lately. Don’t know why. But so juicy and sweet and delish. Going through 2 melons a week. Apparently Millie feels me on this one.

Big Salads with Soy Ginger Roasted Veggies, Avo, and Vegan Parm

Nutrients, man. I dig ’em. Some school days when I’ve been running around just shoving food in my face to alleviate hunger and food feels very chaotic, I often come home and crave a nice veggie-packed meal.

Lately I’ve been really into roasting carrots and Brussels sprouts and sweet potatoes in Trader Joe’s soy ginger dressing and mixing those with romaine, cauliflower rice, and some sort of grain, avocado, Trader Joe’s 21 Seasoning Salut, and oodles of Vegan Parm. That vegan parm on salads tho…πŸ‘Œ

Giant Rome Apples


Rome apples are always on sale for $0.99 a pound at my local grocery store. And they are always ginormous. For some reason, I find huge apples comforting and fun to eat. And I love a deal. So these have been a staple lately. The one pictured above was eaten while cramming for a Toxicology quiz in the back of a giant lecture hall for some seminar all Mailman students had to go to over our lunch break. Boo. So it goes.

Cheesecake from Tea NJ

Popped into a cute local vegan-friendly tea shop after the dentist a few weeks back. Yum. I savored this over a few days. Verdict: Peacefood still has the best vegan desserts on earth, but this was still quite good. It reminded me more of old-school NY style cheesecake where as Peacefood’s is more of a dense, nut-based less-sugary cake. Which I think my taste buds prefer. Anyways, I want to go back and try their wraps, salad, and sammies!

Speaking of desserts, I wanted to point out that a little sugar now and then will not kill you, and anyone who tells you that sugar is a drug or poison should realize that all things are toxic depending on dose, and that deprivation and extreme rigidity is not the path to physical or mental health.

Also, anyone who uses the word “detox” when describing food has just red-flagged themselves as not understanding the biochemistry that is nutrition.
